Our regular Wine & Cheese Evenings in the exclusive, intimate Fraser’s Private Dining Room have become extremely popular, with each one selling out well before the event.

We are fortunate enough to have one of Perth’s premier authorities on all things cheese, Mr. Nick Bath of Blue Cow Cheese Company (www.bluecow.com.au) as host for each evening, alongside some of Australia's best wine producers.

Guests receive a plate of cheeses that are matched to wines, with each expert talking you through each round. The usual format is six cheeses with six tastes (please note, they are not full glasses) of different wines. It's an exclusive yet rather informal evening where you'll learn a lot, as each speaker talks about their wine and cheese match and welcomes any questions from the group (maximum of 30 people). The events are held like an open forum, with all guests sitting around the one large boardroom-style table.

So if you’re an avid cheese and/or wine aficionado, join this very unique occasion to boost your wine and cheese knowledge, meet people and have a few laughs along the way…

The second and final cheese dinner for 2009. Guests will indulge in a fabulous five-course menu designed to match with superb wines courtesy of Franklin from Grape Expectations. Highlights from last year's cheese dinner include the 'watermelon & goats cheese salad with mint & vincotto', the 'tea smoked salmon with leek & brie tart', and the gorgeous 'roquefort (blue cheese) stuffed figs - all designed by our Chef de Torneau
(in other words, he does every section of the kitchen!), 2007 WA Apprentice of the Year,
22-year-old Brendan Pratt, who designed and prepared the entire menu.

Special Degustation Dinners by Chef Chris Taylor

Our Head Chef Chris Taylor has traveled to Bali, Mauritius, Japan, Singapore, South Africa, Phuket, Jakarta, Zimbabwe, London, Ireland, Korea, the United States and extensively throughout Australia, hosting cooking classes, dinners and gala events to educate chef's and the general public of the quality of produce available in Western Australia.

Chris is a big believer in showcasing West Australian produce. He also enjoys tapas and dim sum, where one can experience lots of small tastes, and many different flavours. Hence, he is big on degustation meals - a culinary term meaning "a careful, appreciative tasting of various foods", which focuses on the senses, and high culinary art.


Chef offers a Fraser's Degustation meal during any lunch or dinner setting (except special events), as long as he has a few days notice and there aren't too many large functions on. He creates the menu 'on-the-fly', depending on what your preferences are and what fresh WA produce is best that day. It will cost around $95 per guest (depending on what he serves) for a six-course meal, which includes dessert. Our sommelier can also ensure you receive a wine tasting perfectly matched to each course, for around $165 per guest.

It's a very impressive meal, with all the cutlery changes and different courses on varying plates - and a great way to showcase, or take your time and experience for yourself, the best produce that WA has to offer. Adult Cooking Classes 2009

These classes are perfect for anyone interested in learning new recipes, ideas & techniques from our head chefs here at Fraser's. The class is more of a 'demo' than a hands-on class. You'll be right in the heart of the kitchen, watching the chefs prepare some great dishes, whilst enjoying wine tasting from some of Perth's top wine gurus, including our bar staff! And of course, you'll be able to consume everything that is made on the day, and also take home recipe booklets so that you can re-create the dishes at home. It's a great afternoon.

NEW 'Beef & Beers' Cooking Demonstrations at

THE OLD BREWERY

Calling all carnivores... this class is for you. Come along to the newly refurbished, revamped Old Brewery, to meet chef Greg Farnan and our new brewery Mark Reilly. We've just started brewing again, so the first part of the class is spent in the micro-brewery with our brewer Mark, checking out the vats, the brewing process and of course - pulling your own beers. He'll chat to you about each of our four brand new beers and any seasonal brews he's currently working on.

Then it's over to meet The Brewery's General Manager and Chef, Greg. He's travelled Australia & the globe to source the best meat & steaks, and he'll talk to you about his research 'from paddock to plate'. He'll show you his various cuts of meat and talk about what makes a great steak and more importantly, how to cook one. This 'class' is more of a cooking demo, rather than a hands-on class.
Greg will share a taste of what he cooks - and you'll be able to see exactly where and how he works. A great afternoon for the blokes and ladies thoroughly enjoy these events too.

These classes with Greg are also available to corporate groups and can be booked out exclusively. The format will differ a little, ie - guests can perhaps have a nice big meal together at the end of it all. We can also do more of a general cooking demo, ie - that incldues seafood, pasta, salads, etc. We'll work with you to create a class that suits your team. Contact Shenade for further information.

*Exclusive* Cooking Classes - for Private/Social or Corporate Groups
Our very popular Adult Cooking Classes can also be booked as private events for corporate groups or even just for a fun afternoon with a group of friends. If you book one of these classes as a private event you have the option of choosing the theme you would like or our chef's can select a theme for you. A venue hire fee may be applicable, depending on numbers.

We may also be able to host your event at one of our sister venues, such as Bluewater Grill in Applecross or The Old Brewery, Perth. Our celebrity head chef, Chris Taylor also hosts exclusive cooking demonstrations for private and corporate groups. These can be tailored to suit your needs but generally include sparkling on arrival with Chris and a behind-the-scenes venue tour, a demo of three or four dishes (which guests are given a tasting of, made by our chefs in the kitchen) and wine tasting throughout the evening. These events are always a success, and a unique way to build team spirit and learn about food and wine from one of Perth's top chefs.

Friday September 11th, 6:30-8:30pm

Hands up who wants to learn cocktail basics? This fun and educational class is run by Perth’s top mixologists: Fraser’s Restaurant Manager Tony and Zach from Pernod Riccard. Learn how to set up your basic bar with equipment and ingredients, watch as the boys mix five classic cocktails,

which you get to taste of course, and enjoy gourmet nibblies along the way.



Guests will meet at the bar and receive a mojito on arrival, then be seated in the exclusive Fraser’s Private Dining Room, around the one large boardroom-style table. Tony and Zach will then run through the ins-and-outs of setting up a basic bar, including what spirits, produce, glassware and equipment you’ll need to get started.

The boys will then run through the below five cocktails, talking you through each one’s chief technique, its history, and where, when and why to serve it...

Join us at Fraser’s Restaurant for an evening of fine food with chef Chris Taylor as he presents a unique culinary experience using ingredients sourced from his recent trip to our North West region.

The evening will raise funds for the foundation's work with Indigenous children and youth and will take place up on Fraser’s sweeping Observation Deck, overlooking the Perth city skyline.

Tables of ten are available at $2000, including GST, for the evening.
